My, that's a difficult question to answer! One of them would definitely have to be Betazed. It is the homeworld of one of my closest friends, Deanna Troi. The Betazoids are a telepathic race and their planet is really quite stunning: very lush and colorful, full of lakes - far more than there are on Earth - and waterfalls. And since we were talking about plants, there is a species of plant there called Muktok. They live to be hundreds of years old and their flowers chime like little bells in the wind.
There's also Vilmor II, which, admittedly does not seem very interesting on the surface, as it's been mostly dead for billions of years, but we discovered that it was the common genetic source for all humanoid species in the galaxy.
And of course, I'm always going to have a little bit of a soft spot for the planet where I grew up, Caldos III.
